We wanted to find a way to bring this rice into our own home on any given day, and that was when this recipe for Chipotle Copycat Cilantro Lime Rice was born!
One of our favorite parts about this recipe, aside from being tasty, is that it is so easy to make! All you have to do is cook the rice and then stir in some salt, lime juice, and minced cilantro. Before you know it, you’ll have a restaurant-worthy side right in the comfort of your own home. Let’s dive into a few more specifics!
What ingredients do you need to make Chipotle Copycat Cilantro Lime Rice?
White jasmine rice
We have found jasmine rice to be the best fit for this recipe. It has a long grain and a slightly sticky texture and is perfect for this cilantro lime rice.
Salt, cilantro, and fresh lime juice
All you need to flavor this rice is a little salt, some minced cilantro, and fresh lime juice. That’s all there is to it!
What equipment do you need?
Again, this recipe is simple and easy to make—and the good news is it doesn’t require much equipment either! All you’ll need is:
- A rice cooker, saucepan, or instant pot
- A cutting board
- A knife
- Measuring cups & spoons
How do I make Chipotle Copycat Cilantro Lime Rice?
We’ve provided 3 different options for cooking the rice, so pick whatever option suits you best!
The Rice Cooker
- First, measure out the rice and 1.5 cups of water and place them into the rice cooker.
- Next, add ½ tsp of salt to the rice and water and stir until the salt is evenly distributed.
- If using a rice cooker, select the quick rice or white rice option.
- When the rice is cooked, add the remaining ¼ tsp of salt, the minced cilantro, and the lime juice to the cooked rice. Stir until evenly distributed. We recommend stirring with a rice paddle or rubber spatula to help prevent the breakage of rice grains.
Stovetop
- First, measure out the rice and 2 cups of water and place them into a pot.
- Next, add ½ tsp of salt to the rice and water and stir until the salt is evenly distributed.
- Turn the heat to medium-high and bring the rice to a boil. Once at a boil, cover with a lid and reduce the heat to low. Simmer for about 12 minutes, until all the water is absorbed. Remove the pot from the heat and let it sit with the lid on for 10 minutes. After 10 minutes, fluff the rice with a fork. The rice should be easily fluffed with a fork and not hard or chewy in the center.
- Next, add the remaining ¼ tsp of salt, the minced cilantro, and the lime juice to the cooked rice. Stir until evenly distributed. We recommend stirring with a rice paddle or rubber spatula to help prevent the breakage of rice grains.
Instant Pot
- First, measure out the rice and 1.5 cups of water and place them into the instant pot.
- Next, add ½ tsp of salt to the rice and water and stir until the salt is evenly distributed.
- Set the instant pot to high for 3 minutes. Once the time is complete, let the instant pot naturally release for 10 minutes. After 10 minutes, release the remaining pressure and remove the lid. Fluff the rice with a fork. The rice should be easily fluffed with a fork and not hard or chewy in the center.
- Next, add the remaining ¼ tsp of salt, the minced cilantro, and the lime juice to the cooked rice. Stir until evenly distributed. We recommend stirring with a rice paddle or rubber spatula to help prevent the breakage of rice grains.
Anything else to consider?
If you have leftovers, we recommend storing the rice in an airtight container in the refrigerator where it will keep well for 3-4 days. We like to reheat the rice in the microwave. If you find the rice to be dry when reheating, add a little bit of water to the rice before popping it in the microwave to help it soften again.
