These breakfast tacos are a great way to mix up the classic eggs with toast. Top with bacon, red onion, bell pepper, avocado, and any other preferred toppings.
Any additional toppings of your choice (salsa, hot sauce, cheese, green onion, cilantro, etc.)
Instructions
Start by cooking the bacon or turkey bacon however you prefer, whether that be in the oven, air fryer, or stove. Once the bacon is cooked, chop it into pieces.
Next, cook the hash browns. If you are using traditional shredded hash browns, cook them in a frying pan with a little olive oil or avocado oil, until golden brown. Season with salt and pepper. If you choose to use hash brown patties, cook them according to package directions in either the air fryer or oven.
Crack the eggs into a bowl and whisk. Grease a frying pan with olive or avocado oil and add the beaten eggs. Cook the eggs according to your preference.
Add the avocado into a bowl and mash well. Add lime juice and salt to taste.
Warm up 4 tortillas either in a frying pan or in the microwave.
Dice the avocado into small pieces.
Warm up the tortillas. Assemble the tacos with eggs, bacon, hash browns, salsa, and any other preferred toppings.
Notes
For a gluten-free option, use a corn or almond flour tortilla. For a vegetarian option, skip the bacon.
