These carrot cake oatmeal bars take the delicious flavors from a fan favorite dessert and turn them into breakfast bars with wholesome ingredients. They feature fresh carrot, warming spices, natural sweetness from maple syrup, and a tasty yogurt topping.
Optional add ins: golden raisins, coconut, walnuts
For the yogurt topping:
2cupsvanilla yogurt
Maple syrup to taste (depending on sweetness of yogurt)
Instructions
Preheat the oven to 350 degrees Fahrenheit. In a large mixing bowl, add the eggs, oil, maple syrup, vanilla extract, and almond milk and whisk well.
Add the shredded carrots to the mixture and mix well.
Next, add the dry ingredients: oats, protein powder, baking powder, salt, cinnamon. Whisk until combined.
Line an 8x8 inch baking dish with parchment paper and spray with cooking spray. Pour the batter in the dish. Bake for 28-32 minutes or until the center of the baked oats are set.
While the oats are baking, add the yogurt to a small bowl. Add maple syrup to taste and combine.
Let the baked oats cool for 15 minutes before serving. Serve with a dollop of the yogurt mixture.
Notes
You can make your own oat flour by blending oats in a blender or processing them in a food processor until fine.

Prep Ahead:
You can prep the yogurt topping ahead of time. You can also make these healthy carrot cake bars and freeze them to use at another time (see below).
Freezer-friendly:
Bake the bars and let them cool to room temperature. Cut them into squares and store in a freezer-safe container or Ziplock bag. If you need to stack the pieces, we recommend separating the layers with parchment paper to prevent them from freezing together.
