These sausage breakfast sandwiches are perfect for meal prep with fluffy baked eggs, chicken sausage, and English muffins. Freezer-friendly and great for busy mornings.
Preheat the oven to 350 degrees fahrenheit. Lightly spray a 9x13 inch baking dish or sheet pan with cooking spray.
In a large bowl, whisk together the eggs, salt, and pepper until well combined.
Pour the egg mixture into the prepared baking dish. Bake for 15-18 minutes, or until the eggs are fully set.
While the eggs bake, heat the chicken sausage patties in a skillet over medium heat according to package instructions, or bake them on a separate sheet pan alongside the eggs.
Once the eggs are done, let them cool for a few minutes, then cut into 8 even squares to fit your English muffins.
Toast the English muffins until golden brown, or wait to toast them if you aren’t serving right away.
To assemble, layer a chicken sausage patty, a square of baked egg, and a slice of cheese (if using) on the bottom half of each muffin. Top with the other half.
If serving right away, pop the assembled sandwiches back in the oven for 2-3 minutes (350 degrees) to melt the cheese.
To meal prep, wrap sandwiches individually and store in the fridge for up to 4 days, or in the freezer for up to 2 months. Reheat in the microwave (and toast the muffin if desired) or air fryer. Add additional toppings as desired at time of serving, such as hot sauce or avocado slices.
