This easy homemade ramen is made with flavorful chicken broth, tender rotisserie chicken, ramen noodles, and your favorite toppings for a quick, cozy meal.
1poundground meat of choice (ground Italian chicken or pork sausage, ground turkey, or ground beef all work well)
½small onion, finely diced
1tablespoonminced garlic
1, 28 ounce can San Marzano tomatoes, blended
1teaspoonItalian seasoning
1poundpotato gnocchi
¼cupheavy cream
3cupsbaby spinach
⅓cupfreshly grated parmesan cheese
Salt and pepper to taste (will vary depending on type of meat used)

Instructions
Heat the olive oil in a large skillet over medium-high heat. Add your meat of choice and onion, breaking the meat apart with a spatula as it cooks. Sauté for 6-8 minutes, or until the meat is browned and cooked through.
Add the garlic and cook for 30 seconds, until fragrant.
Stir in the blended San Marzano tomatoes, Italian seasoning, salt, and pepper. Bring to a gentle simmer.
Add the gnocchi and stir to combine. Cook for 3 minutes over medium heat. Add the spinach and cook for an additional 3 minutes until the spinach is wilted and the gnocchi is tender.
