This chicken couscous soup is a cozy, brothy soup made with tender chicken, pearl couscous, warm spices, and vegetables—perfect comfort food for soup season.
Salt and pepper, to taste (for seasoning the chicken)
1small yellow onion, diced
3stalks celery, diced
3medium carrots, diced
1tablespoonminced garlic
1tablespooncurry powder
½teaspoonturmeric
1teaspoonkosher salt
¼teaspoonblack pepper
8cupschicken broth
1cuppearl couscous
1cupfrozen peas (optional)
Squeeze of lemon for serving, optional
Instructions
Season chicken breasts with salt and pepper. In a large soup pot, heat the oil over medium heat. Sear chicken on both sides until browned, about 3-4 minutes per side. Remove from the pot and set aside, it doesn’t need to be fully cooked yet.
In the same pot, add a bit more oil if needed. Sauté onion, celery, and carrots for 5–7 minutes, until softened and fragrant. Stir in the garlic, curry powder, turmeric, salt, and pepper.
Add the chicken broth to the pot and bring to a boil over medium high heat. Add the couscous and partially cooked chicken breasts to the pot. Stir well, reduce the heat to medium, and let the mixture simmer for 8-12 minutes.
Once the chicken breast is fully cooked and reaches 165 degrees, remove the chicken from the pot and dice into cubes or shred with two forks. Let the cous cous continue to simmer until tender. Add the chicken back into the pot as well as the peas and add lemon juice and additional salt to taste.

Save time/prep ahead:
Chop the onion, celery, carrots, and garlic cloves up to 2 days ahead and store in the fridge.
Cook and shred the chicken in advance to shorten the active cooking time.
