Instructions
Add the peanut butter, coconut oil, and honey to a large bowl that is microwave-safe.
Microwave in 30-second increments, stirring between each, until smooth and well combined.
Add the salt and vanilla extract and stir again.
Add the protein powder, oats, and graham cracker crumbs. Mix until evenly combined.
Fold in the mini marshmallows and chocolate chips.
Using a cookie scoop, scoop the mixture into evenly sized bites and place onto a parchment-lined plate, baking sheet, or storage container.
Refrigerate for 20–30 minutes, or until firm.
Store the protein bites in an airtight container in the refrigerator for up to 1 week.
For longer storage, freeze for up to 2 months. Let thaw for a few minutes before eating for the best texture.
