6cupschicken bone broth (can also use regular chicken broth)
3tablespoonslow sodium soy sauce or tamari
20ouncesmini chicken wontons (Bibigo brand for example)
1cupshredded carrots
¾cupsliced green onions
3cupsspinach (or bok choy)
Chili crisp or Sriracha for serving (optional)
Additional salt to taste (will depend on saltiness of broth used)
Instructions
Heat sesame oil in a large pot over medium heat. Add the ginger and garlic and cook for 1-2 minutes, stirring often, until fragrant.
Pour in the chicken bone broth and soy sauce (or tamari). Bring to a gentle simmer.
Add the frozen wontons and shredded carrots directly to the pot. Simmer according to package directions, usually 3-5 minutes, until the wontons are cooked through and floating.
Add the green onions and spinach (or bok choy) and cook for 1-2 minutes until the spinach is wilted.
Taste and add more soy sauce as needed. Serve warm with chili crisp or sriracha on top.
