4cupsof cooked and cooled jasmine rice (HIGHLY recommend using day-old rice for this, it makes a big difference!)
Salt, pepper, and additional soy sauce to taste
Instructions
Heat sesame oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up as it browns. Season lightly with salt and pepper. Once fully cooked, discard any excess grease. Next, drizzle in 2 tablespoons of the soy sauce and the honey. Simmer for 2-3 minutes until the sauce is absorbed, then remove the beef from the pan and set aside.
Reduce heat to medium and add 1 tablespoon of butter or avocado oil to the same skillet. Pour in the whisked eggs and gently scramble until just set. Remove from the pan and set aside with the beef.
Add another 1 tablespoon of butter or oil to the pan. Stir in the diced onion and carrots and cook for 3-4 minutes, until softened.
Add the last tablespoon of butter, the green onions, peas, garlic, and rice to the skillet and stir until combined. Cook for another 3-5 minutes, stirring occasionally, allowing the rice to fry in the pan.
Return the beef and eggs to the pan. Pour in the remaining 2 tablespoons of soy sauce and toss everything together until well combined and heated through. Taste and adjust seasoning with additional soy sauce and salt and pepper as needed.

Save time/prep ahead:
Cook rice in a rice cooker a day ahead and refrigerate until ready to use.
Dice vegetables in advance and store them together for quick assembly. You can also use a bag of frozen peas and carrots to reduce chopping time for the carrots.
This is a great recipe to prep for meal planning and makes excellent leftovers.
Keep cooked rice on a baking sheet in the fridge to cool quickly and evenly before using.
