These delicious blueberry protein muffins are packed with extra protein and wholesome ingredients. They're an easy and satisfying snack or addition to breakfast on busy mornings.
1 ½cupsplus 1 teaspoon Kodiak Cakes Power Mix, divided(don't pack the measuring cup)
¼cupvanilla protein powder
1teaspoonbaking powder
½teaspoonbaking soda
¼teaspoonkosher salt
½teaspoonground cinnamon (optional)
1cup frozen blueberries
Instructions
Preheat the oven to 375 degrees Fahrenheit. In a large bowl, add the Greek yogurt, maple syrup, eggs, oil, and vanilla. Whisk until well combined.
Add the 1 ¼ cups Kodiak Cakes Power Mix, vanilla protein powder, baking powder, baking soda, salt, and cinnamon. Mix until just combined.
In a separate small bowl, add the blueberries and 1 tsp of Kodiak Cakes mix. Toss gently until the blueberries are coated in the mix.
Gently fold the blueberries into the batter. Don’t over mix.
Add muffin liners to a muffin pan and lightly spray the liners with cooking spray. Add muffin batter to each muffin cup, until it’s ¾ of the way filled. Bake for 16-20 minutes, or until the tops are lightly golden brown.

For a gluten-free option, you can try using Kodiak Cakes gluten-free pancake mix.
