1 ½poundsboneless skinless chicken breast, butterflied (swap for chicken thighs if you prefer)
3tablespoonsolive oil
3tablespoonsfresh lemon juice (about 1 lemon)
1tablespoonred wine vinegar
1tablespoonminced garlic
2teaspoonsdried oregano
¾teaspoonpaprika
1teaspoonkosher salt
½teaspoonblack pepper
1lemon, for serving
Instructions
In a medium bowl or ziploc bag, whisk together the olive oil, lemon juice, red wine vinegar, garlic, oregano, paprika, salt, and black pepper.
Add the chicken and coat well with the marinade. Seal the bag or cover the bowl and refrigerate for at least 30 minutes or up to 4 hours.
Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
Remove chicken from the marinade, letting the excess marinade drip off. Grill for 4-5 minutes per side, depending on thickness, until the internal temperature reaches 165°F and chicken is golden and slightly charred.
