1 ½ lbsboneless skinless chicken breast (about 3 chicken breasts)
1teaspoondried dill
2teaspoondried basil
2teaspoondried oregano
2teaspoongarlic powder
1teaspoonpaprika
½teaspoonchili powder
1teaspoonkosher salt
2tablespoonolive oil (or nonstick spray for grilling)
1lemon, cut in half
Instructions
Begin by cutting each chicken breast in half lengthwise (similar to butterflying, but cutting all the way through so you have two pieces with equal thickness). Place each piece of chicken on a parchment-lined baking sheet. Pat dry with a paper towel if needed.
In a small bowl, combine all of the spices and mix together until well combined. Once combined, liberally coat each side of the chicken breasts with the spices. Note that you can brush or lightly spray the chicken with oil to help the spices stick if needed.
If cooking with a skillet on the stove: Note that you will need to cook the chicken in two batches. Heat 1 tbsp of the olive oil in a large skillet on medium-high heat. Place one of the lemon halves cut-side down in the skillet. When the oil is hot, place half of the chicken pieces into the skillet. Cook each side for about 5 minutes, until the chicken is browned and crispy and the internal temperature reaches 165 degrees Fahrenheit. If the chicken is browned but not yet at temperature, you can reduce the heat to medium to continue cooking the chicken, but prevent burning of the crust. Repeat with the second batch of chicken. Serve with a squeeze of the sauteed lemon. If cooking on the grill: heat the grill to medium-high heat. Spray with non-stick cooking spray, and place the lemon halves cut side down on the grill. Next, place the chicken on the grill, and reduce the heat to medium. Cook each side for about 3-5 minutes, until the chicken is browned and reaches an internal temperature of 165 degrees Fahrenheit. Serve with a squeeze of the grilled lemon.
