½medium yellow onion, diced

2teaspoonsminced ginger

1,15-ouncecan tomato puree
⅓cupheavy cream

Instructions
In a medium bowl, combine the Greek yogurt, garam masala, cumin, salt, and pepper. Add the chicken and toss to coat. Let it marinate for at least 20–30 minutes (or refrigerate up to 4 hours).
Heat the oil in a large skillet over medium high heat. Add the marinated chicken and cook until the pieces are browned on the outside and cooked, about 6-7 minutes. Transfer the chicken to a plate and set aside.
In the same skillet, melt the butter. Add the diced onion and cook until soft and translucent, 3-4 minutes.
Stir in the garlic, ginger, garam masala, cumin, and salt. Stir well. Pour in the tomato puree and stir well. Bring to a simmer and cook for 2–3 minutes. Return the chicken and any juices to the skillet. Stir to coat the chicken in the sauce. Reduce heat, cover, and simmer for 5-6 minutes.
Stir in the heavy cream and let the sauce simmer on low for another 2–3 minutes. Taste and adjust seasoning as needed.

Save time/prep ahead:
Marinate the chicken in a large bowl up to 4 hours ahead and keep it covered with plastic wrap in the fridge.
Dice the onion and measure spices earlier in the day to streamline cooking time.
