These Kodiak Cakes German pancakes are our lighter take on the classic German pancakes. They're great for a brunch or prepared ahead of time for an easy breakfast meal prep. Top them with any of your favorite toppings like berries and maple syrup.
1cupKodiak Power Cakes Mix (can replace with normal flour)
1cupunsweetened almond milk or milk of choice
6eggs
1teaspoonvanilla
½teaspoonkosher salt
2tablespoonbutter
Toppings of choice:Fresh berries or other fresh fruit, maple syrup, brown sugar or powdered sugar, whipped cream
Instructions
Preheat the oven to 425 degrees Fahrenheit.
In a blender, add the Kodiak Power Cakes mix (or regular flour), almond milk, eggs, vanilla, and salt. Blend for 20 seconds until smooth.
Place the butter in the bottom of a 9x13-inch baking dish. Set the baking dish with the butter inside the oven for 2 minutes, or until the butter is completely melted. Remove the baking dish from the oven.
Move your pan back and forth carefully to make sure the melted butter spreads evenly on the bottom of the dish.
Add the mixture from the blender to the baking dish and make sure it is evenly spread.
Place the baking dish back in the oven for 16-20 minutes, or until the mixture is set in the center and the edges are golden brown.
Notes
One thing to note is that because the Kodiak Cakes mix is more dense than regular flour, the edges of the German pancakes do not rise as much as those made with all purpose flour.

This recipe can be made gluten-free simply by substituting the flour with 1 cup of gluten-free Kodiak Cakes mix or 1 to 1 gluten-free flour. To make this recipe dairy-free, simply substitute the butter with coconut oil.
