1 ½poundswhole carrots (can also use baby carrots)
1tablespoonolive oil
½teaspoonsalt
¼teaspoonblack pepper
For the glaze
3tablespoonsapricot preserves
1teaspoonsoy sauce (or coconut aminos for a gluten-free option)
1teaspoonapple cider vinegar
2-3teaspoonschili crunch (or chili crisp)
Instructions
Preheat your oven to 400°F. Line a baking sheet with parchment paper. Rinse and scrub the exterior of the carrots but leave them whole. You can peel the carrots if you prefer, but we leave them unpeeled for this recipe.
Toss the carrots with olive oil, salt, and pepper. Spread in an even layer. Roast the carrots for 20-25 minutes, stirring halfway through, until tender and starting to brown on the edges.
While the carrots roast, whisk together the glaze in a small bowl. Warm in a microwave for 15–30 seconds to loosen it, if needed.
After 20 minutes, remove the carrots from the oven and drizzle the glaze over them. Toss gently to coat. Return to the oven and roast for another 8–10 minutes, until caramelized and sticky.

Prep ahead: If peeling or cutting carrots, you can do this up to 2 days in advance and store in the fridge.
Glaze ahead: Whisk the apricot sauce together (apricot preserves, soy sauce, vinegar, chili crisp) and refrigerate for up to 3 days. Just warm slightly before using.
