Rotisserie Chicken Wrap With Green Goddess Dressing
This easy rotisserie chicken wrap is loaded with flavor thanks to crisp bacon, avocado, and a homemade green goddess dressing—perfect for a quick lunch or busy weeknight dinner using leftover chicken!
1headof romaine lettuce, washed and torn into large pieces
1tomato, sliced
½of a medium avocado, sliced
4slices of bacon, cooked crispy and cooled
Instructions
Add all dressing ingredients to a blender or food processor. Blend until smooth and creamy. Taste and adjust seasoning if needed. Thin with water, 1 tablespoon at a time, until desired consistency is reached.
In a medium bowl, combine the shredded chicken with about half of the dressing. Stir to coat evenly. Set aside.
Next, assemble the wraps. Lay out the wraps on a flat surface. For each wrap, layer the ingredients in the following order: A large romaine leaf, sliced tomato, avocado, bacon, dressed shredded chicken. Season with salt and pepper. Serve with the remaining dressing drizzled inside the wrap or on the side for dipping. Roll each wrap tightly. Slice in half if desired.

Save time/prep ahead: buy a store-bought green goddess salad dressing. Buy pre-cooked bacon that you warm up in the microwave.
