This Scandinavian almond cake is one of our favorite recipes that our family has been making for generations! This recipe originated in Denmark from our Grandma. It's a delicious, buttery, dense almond cake that is easy to make and requires few ingredients.
Preheat the oven to 325 degrees. Line a 9 to 10 inch cake pan, pie dish/tin, or springform pan with parchment paper and spray with non-stick spray.
In a medium bowl, add the melted butter, sugar, eggs, and almond extract. Mix well.
Add the flour and salt and mix well. Add the batter to the prepared pan and use a spatula to evenly spread it out. Sprinkle the sliced almonds on top.
Bake for 18-24 minutes, or until the edges are golden brown and the center of the cake is fully set (a toothpick should come out clean or with a few moist crumbs). Let the cake cool completely before cutting into slices.
Notes
Top with powdered sugar when serving for an extra pretty look.
Feel free to serve with fresh raspberries or ice cream.
