These chocolate covered strawberry yogurt clusters are the perfect combination for a delicious treat! Sweet strawberries and creamy yogurt with a chocolate coating are the perfect way to satisfy your sweet tooth.
2-3tablespoonsmaple syrup (depending on preference for sweetness)
1teaspoon vanilla
2cupsdark chocolate chips
1tablespoon coconut oil
Sea salt to top if desired
Instructions
Finely dice the strawberries and add them to a small mixing bowl. Measure out the Greek yogurt, maple syrup, and vanilla and add it to the bowl with the strawberries. Mix gently until well combined.
Line a baking sheet with parchment paper. Make sure the baking sheet can fit in your freezer. Using a spoon, scoop a dollop of the yogurt mixture onto the parchment paper. Make 12 clusters of yogurt that are all approximately the same size. Place the baking sheet in the freezer for 30-60 minutes, or until frozen.
Once the yogurt clusters are frozen, begin preparing the chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl. Place in the microwave for 30 second increments, stirring in between each increment, until melted.
You will need to move quickly for this next part as the yogurt can melt quickly. Pull the yogurt clusters out of the freezer and begin covering each in the chocolate. One at a time, place the cluster on a large spoon and place it in the chocolate. Turn until covered in chocolate and place back onto the baking sheet. Sprinkle with sea salt if desired. Repeat for all the clusters and return the sheet pan to the freezer for the chocolate to completely harden. If the yogurt softens before you’ve dipped all of them, set them back in the freezer until firm before continuing with the dipping process.
Once hardened, move the clusters to an airtight container and store in the freezer. When ready to eat a cluster, remove it from the freezer and let it soften for a few minutes prior to eating. Enjoy!
Notes
Dipping frozen yogurt clusters in warm chocolate can be a little tricky, so here are our best tips!
Completely melt the chocolate chips in the microwave, but make sure you don't burn the chocolate! (30-second increments, stirring in between each increment). The coconut oil will also help to thin out the chocolate, so don't forget to add it in. The thinned chocolate will make it easier to cover each cluster.
You can also dip the clusters in batches to prevent the yogurt from melting when dipping. Start with 3-4 at a time and leave the others in the freezer. Then switch them out and continue to dip until all are covered in chocolate.
If you find it becomes difficult to dip the clusters as the melted chocolate starts to run out, you can always melt more chocolate chips!
Let the chocolate strawberry cluster sit at room temperature for a few minutes before eating or until the yogurt is softened. We recommend letting it sit on a paper towel or plate so that it doesn't melt onto the counter (especially if the bottom is not completely covered with chocolate).
