This easy ground beef stroganoff recipe features tender ground beef in a homemade, flavorful, and creamy sauce. Serve over your choice of rice or noodles.

1cupbeef broth
⅓cupplain Greek yogurt or sour cream(omit or use dairy-free sour cream for dairy-free)

Instructions
Place a large skillet on the stove over medium heat. Add the oil. Once the oil is hot, add the ground beef. Use a spatula to break up the meat as it browns. Let the meat cook for 5-6 minutes until it’s fully cooked. Drain off any excess grease.
Add the minced garlic, mushrooms, and onions to the pan. Let the mushrooms cook for 3-4 minutes until softened.
Next, sprinkle the flour over the mixture and stir until combined. Add the paprika, thyme, salt, pepper, and Dijon mustard and mix well.
Pour the milk and beef broth in the pan and stir until combined. Let the mixture simmer for 5-6 minutes, stirring constantly until it begins to thicken. Turn the heat to low once it begins to thicken. Remove the pan from heat and add the Greek yogurt and lemon juice. Mix well. Let the mixture simmer on low for 2-3 more minutes.
Serve hot over rice or noodles.
Notes
This recipe can be made dairy-free with the use of olive oil and unsweetened almond or cashew milk and omitting the Greek yogurt or swapping it with dairy-free sour cream. It can be gluten-free with the use of a gluten-free flour, such as 1 to 1* and served with rice or gluten free noodles.
