Ingredient Notes
- Olive oil or butter
- Lean ground beef - you will need one pound of ground beef. We like to use ground beef for a classic beef stroganoff, but feel free to swap it for ground turkey if desired. You could also use ground chicken for a ground chicken stroganoff recipe. We also like to use lean beef.
- Minced garlic - we prefer fresh/minced garlic over garlic powder for this recipe.
- Fresh mushrooms - you can use whichever mushrooms you like for this recipe—white mushrooms, baby bella mushrooms, and cremini mushrooms are all good options. We like to buy sliced mushrooms from the grocery store to reduce prep time.
- Yellow onion - you can use white onions too.
- Flour
- Milk- use unsweetened almond milk or cashew milk for dairy-free.
- Low sodium beef broth - beef stock would work as well.
- Paprika
- Dried thyme
- Kosher salt
- Black pepper
- Dijon mustard
- Plain Greek yogurt or sour cream - omit or swap with dairy-free sour cream for dairy-free option.
- Fresh lemon juice
- Fresh parsley for topping - we love to sprinkle the top of the dish with a little bit of fresh parsley!
- Rice or noodles - prepare rice or noodles according to the package directions. We like to use wide egg noodles cooked al dente or jasmine rice. You could also serve over mashed potatoes.

Step by Step Directions

Step 1: Place a large skillet on the stove over medium to medium-high heat. Add the oil. Once the oil is hot, add the ground beef. Use a spatula to break up the meat as it browns. Let the meat cook for 5-6 minutes until it’s fully cooked. Drain off excess grease.
Step 2: Add the minced garlic, mushrooms, and onions to the pan with the cooked ground beef. Let the mushrooms cook for 3-4 minutes until softened.
Step 3: Next, sprinkle the flour over the mixture and stir until combined. Add the paprika, thyme, salt, pepper, and Dijon mustard.
Step 4: Pour the milk and beef broth in the pan. Let the mixture simmer for 5-6 minutes, stirring constantly (to prevent sticking to the bottom of the pan) until it begins to thicken. Turn to low heat once it begins to thicken. Mix until combined. Let the mixture simmer on low for 2-3 more minutes.
Step 5: Remove the pan from heat and add the Greek yogurt and lemon juice. Mix well. Serve over noodles or rice.
Tips & Variations
- We usually serve this hamburger stroganoff recipe over rice or noodles, but you can also serve it over mashed potatoes.
- To make a complete meal, serve the stroganoff and noodles/rice with a side salad or veggies like green beans or peas.
FAQ
Let the stroganoff sauce cool to room temperature, then store in an airtight container in the refrigerator. We recommend storing the sauce and rice or noodles separately and eating it within 3-4 days.
You can also freeze the sauce to use at another time. We recommend storing in an airtight container or Ziploc bag and freezing for up to 3 months. When you are ready to eat it, place into the refrigerator to thaw overnight. Alternatively, you can thaw it in a bowl of cold water the day of. Make sure it is in a sealed bag and place it into a bowl of cold water, changing the water every 30 minutes until thawed. Then reheat over the stove and cook the noodles fresh the day of serving.
This recipe can be made dairy-free with the use of olive oil and unsweetened almond or cashew milk. It can be gluten-free with the use of a gluten-free flour, such as 1 to 1* and served with rice or gluten free noodles.
