6cupsfresh, sliced peaches (about 6-7 peaches, can remove skin if preferred)
⅓cupbrown sugar
2tablespoonscornstarch or arrowroot powder
1teaspooncinnamon
1teaspoonvanilla extract
1tablespoonlemon juice
¼teaspoonkosher salt
1tablespoonbutter, melted
For the crumb topping:
¾cupall-purpose flour
½cupbrown sugar
½teaspooncinnamon
6tablespoonsunsalted butter, cold and cut into small cubes
¼teaspoonkosher salt
Instructions
Preheat the oven to 375°F. Lightly grease a 9x9-inch baking dish.
In a large bowl, combine sliced peaches, brown sugar, cornstarch, cinnamon, vanilla, lemon juice, salt, and melted butter. Mix until the peaches are well coated. Pour the peach mixture into the prepared baking dish.
In a medium bowl, stir together flour, brown sugar, cinnamon, and salt. Add the cold cubed butter to the flour mixture and use a pastry cutter, fork, or your fingers to work the butter into the dry ingredients until the mixture forms coarse crumbs.
Evenly sprinkle the crumb mixture over the peach filling.
Bake for 40–50 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
Cool for 10-15 minutes before serving to allow the peaches to set. Serve warm on its own or with a scoop of vanilla ice cream or a dollop of whipped cream.
