These sheet pan chicken fajitas are one of our favorite recipes for busy weeknights. They feature juicy chicken, sliced bell peppers and onion tossed in delicious homemade fajita seasoning.
Cut the chicken breast into thin strips and place into a large bowl. Thinly slice the onion and bell peppers and place them into the bowl with the chicken. Add the avocado oil and mix until evenly coated.
Add the chili powder, cumin, garlic powder, oregano, paprika, salt, and coconut or brown sugar to a small bowl and mix until well combined. Add the seasonings over the chicken, onions, and bell peppers. Mix until everything is evenly coated in the spices.
Add the seasoned chicken and veggies to a large baking sheet and spread into an even layer (for best results, we recommend that you do not line your baking sheet with parchment paper).
Place the pan into the oven and bake for 10-13 minutes. Turn the oven to broil and broil for 4-6 minutes or until the chicken reads 165 degrees with an instant-read thermometer. The chicken and veggies should have some browning and caramelization, but should not be burned—keep a close eye and remove early if needed to prevent burning. Remove the pan from the oven. While the fajitas are cooking, prepare any needed toppings.
Serve with warm tortillas and top with guac, salsa, cilantro, and any other preferred toppings.
