Ingredient Notes
- Boneless skinless chicken breast - we prefer chicken breast for this recipe, but you could swap for boneless chicken thighs if preferred.
- Bell pepper - we love colorful bell peppers in this recipe! We prefer red, orange, and yellow bell peppers over green bell peppers.
- White onion - can swap for red onion or yellow onion if desired.
- Avocado oil - can swap for olive oil.
- Tortillas - you can use warm flour tortillas or corn tortillas depending on preference. For a gluten-free option, use corn tortillas.
- Toppings - we have suggested our favorite toppings for this recipe, but it is easily customizable to your preferences.

Step 1: Preheat the oven to 425 degrees F.
Cut the chicken breast into thin strips and place into a large bowl. Thinly slice the onion and bell peppers and place them into the bowl with the chicken. Add the avocado oil and mix until evenly coated.
Step 2: Add the chili powder, cumin, garlic powder, oregano, paprika, salt, and coconut or brown sugar to a small bowl and mix until well combined.
Step 3: Add the seasonings over the chicken, onions, and bell peppers.
Step 4: Mix until everything is evenly coated in the spices.
Step 5: Add the seasoned chicken and veggies to a large baking sheet and spread into an even layer (for best results, we recommend that you do not line your baking sheet with parchment paper).
Step 6: Place the pan into the oven and bake for 10-13 minutes. Turn the oven to broil and broil for 6-10 minutes or until the chicken reads 165 degrees with an instant-read thermometer. The chicken and veggies should have some browning and caramelization, but should not be burned. Remove the pan from the oven. While the fajitas are cooking, prepare any needed toppings.
Serve with warm tortillas and top with guac, salsa, cilantro, and any other preferred toppings.
