Instructions
Prepare the fruit. Cut the apples into chunks (no need to remove the peel), grapes into halves, strawberries into bite-sized pieces, and bananas into slices. Drain the mandarin oranges and pat them dry with a paper towel. Add them to a large mixing bowl or serving bowl.
Next, add the heavy whipping cream, maple syrup, and vanilla to a bowl with a hand mixer or Kitchenaid stand mixer with the whisk attachment. Whip until medium peaks form. Be careful not to over whip it or the cream will curdle.
Add the homemade whipped cream to the large bowl with the fruit mixture and gently fold until the cream is evenly distributed throughout the fruit. Add the chocolate chips and gently combine. Top with additional banana slices, chocolate chips, and pomegranate seeds if desired. Serve immediately.
Notes
If you want to make this fruit salad ahead of time, we recommend preparing it only a few hours before it will be served for best results. Store covered in the refrigerator until ready to serve.
This fruit salad is best the day it is made, but if you have leftovers you can store it in an airtight container in the refrigerator but note that the fruit will become softer as it sits and the cream will change texture after refrigeration.
