This white chocolate Chex mix is a sweet and salty snack made with Rice Chex, pretzels, kettle corn, and white chocolate chips. Perfect for holiday parties and gifting.
In a very large bowl, add the Rice Chex and pretzels. Set aside.
Place the white chocolate chips in a microwave-safe bowl. Microwave in 30-second increments, stirring between each, until smooth and fully melted. Be careful not to overheat. (You can also use a double boiler if preferred.)
Pour about two-thirds of the melted chocolate over the Rice Chex and pretzels. Gently stir, scraping along the bottom of the bowl, until evenly coated.
Line a cookie sheet or baking tray with parchment paper. Spread the kettle corn evenly onto the prepared sheet. Drizzle the remaining one-third of the melted chocolate over the popcorn, then immediately sprinkle the M&M candies over the top.
Place the popcorn in the refrigerator or freezer until the chocolate is fully hardened.
Once set, break the popcorn into clusters. Add the clusters to the bowl with the coated cereal and pretzels. Gently toss to combine.
Spread the entire mixture back onto the parchment-lined sheet pan in an even layer. If it is not completely hardened, you can let it chill briefly in the refrigerator until fully set.
Break into smaller pieces if needed and enjoy.
