These Greek smash pitas with homemade tzatziki sauce are a fun spin on Greek gyros. It comes together in about 30 minutes and is a great option for weeknights when you need a quick meal.
Toppings of choice: diced cucumber, diced red onion, feta cheese, sliced grape tomatoes
For the homemade tzatziki:
1cupplain Greek yogurt
¾cuppeeled and shredded cucumber
1tablespoonlemon juice
2teaspoonsfresh dill, minced
¼-1/2teaspoonsalt
¼teaspoonpepper
1teaspoon minced garlic
Instructions
Add the ground meat of choice, dill, oregano, garlic, salt, and pepper to a large bowl. Mix until combined.
Add all of the ingredients for the tzatziki to a small mixing bowl. Mix until combined and set aside. Prepare any other toppings for assembling like cucumber, red onion, tomato, etc. and set aside.
Place the pita bread on a sheet pan. Divide the meat mixture evenly into 4 portions. Place one portion on each pita bread. Evenly press the meat mixture into a thin layer on the pita bread.
Place a large skillet on the stove over medium heat and add a thin layer of oil. Alternatively, you could also use a hot griddle. Once the oil is hot, cook one pita at a time by placing the pita meat side down onto the hot pan. Carefully smash down the pita into the pan with your hands or a heavy pan. Let the pita cook for 4-5 minutes, and then flip the pita over. Let the other side cook for an additional 2-3 minutes, until the meat is completely cooked through and the pita is golden brown. Remove the pita from the stove and set aside. Repeat this step for each pita bread until you have cooked all 4.
Add the homemade tzatziki, and any other desired toppings to the wrap.

You can prepare the tzatziki sauce and meat mixture ahead of time and store in the refrigerator until ready to use. You can also freeze the meat mixture in a ziploc bag to use at another time.
