These Greek smash pitas with homemade tzatziki sauce are a fun spin on Greek gyros. It comes together in about 30 minutes and is a great option for weeknights when you need a quick meal.

Ingredient Notes
- Ground chicken or ground turkey - we prefer to use ground chicken or turkey, but you can use any ground meat of choice. Ground beef, ground lamb, or ground pork could be good substitutes depending on your preference.
- Fresh dill - we prefer fresh dill for this recipe but if you need to use dried dill, use โ of the amount or season to taste.

- Make sure to smash down the pita into the panโthis helps to ensure the meat gets evenly spread across the hot pan to create caramelized goodness across the pita.
- You could toss the toppings (cucumber, tomato, red onion, etc.) into a little bit of olive oil, red wine vinegar, and oregano for extra flavor.
How to Make

Step 1: Add the ground meat of choice, dill, oregano, garlic, salt, and pepper to a large bowl. Mix until combined.
Step 2: Add all of the ingredients for the tzatziki to a small mixing bowl.
Step 3: Mix until combined and set aside. Prepare any other toppings for assembling like cucumber, red onion, tomato, etc. and set aside.
Step 4: Place the pita bread on a sheet pan. Divide the meat mixture evenly into 4 portions. Place one portion on each pita bread. Evenly press the meat mixture into a thin layer on the pita bread.
Step 5: Place a large skillet on the stove over medium heat and add a thin layer of oil. Alternatively, you could also use a hot griddle. Once the oil is hot, cook one pita at a time by placing the pita meat side down onto the hot pan. Carefully smash down the pita into the pan with your hands or a heavy pan. Let the pita cook for 4-5 minutes, and then flip the pita over. Let the other side cook for an additional 2-3 minutes, until the meat is completely cooked through and the pita is golden brown.
Step 6: Remove the pita from the stove and set aside. Repeat this step for each pita bread until you have cooked all 4.
Step 7: Add the homemade tzatziki, and any other desired toppings to the wrap.

Greek Smash Pitas FAQs
If you are not planning to make all four pitas, we recommend only making the ones you will eat. Then store the ground meat mixture in an airtight container in the refrigerator. Store extra tzatziki sauce and any toppings in airtight container in the refrigerator as well. Then, when you are ready to make the rest of the pitas you will have everything ready to go.ย
You also can make the meat mixture and store it in a ziploc bag in the freezer to use at a later date. We recommend pulling it out of the freezer and putting it into the refrigerator the night before using or thawing in a cold water bath the day of.
This recipe can be gluten-free with the use of gluten-free pita bread. It can be dairy-free with the use of dairy-free plain yogurt in place of regular Greek yogurt. It is not vegan or vegetarian.
