Instructions
Begin by preparing the frozen hash brown patties. Prepare them in either the oven or air fryer. We recommend the air fryer method because it helps the hash browns to get extra crispy. For the air fryer: place the hash brown patties in the air fryer basket. Cook them at 400 degrees for 6-8 minutes. Flip them and cook for another 3-4 minutes or until crispy. For the oven: bake according to package instructions. Note that the oven will take longer than the air fryer. Use the broil function for the last few minutes to help the hash brown patties get crispy.
While the hash browns cook, prepare two fried eggs in a pan. Heat the pan over medium heat and allow it to get hot. Add olive or avocado oil spray to prevent sticking and then add the eggs to the pan. Prepare them according to your preference for either easy, medium, or hard cooked eggs. You can also use a scrambled or poached egg here if you prefer.
Add half of an avocado to a bowl and mash well. When the hash brown patties are cooked, carefully place them on a plate. Spread half of the avocado spread on each hash brown.
Top the hash brown patties with the fried egg. Sprinkle salt and pepper on top and add any other additional toppings if desired.
Notes
We recommend cooking the hash browns in an air fryer if possible to help them get extra crispy. If this is not possible, you may need to use the broil function of the oven to help obtain the same level of crispiness—but keep an eye on them! They can burn very quickly on broil.
