While the hash browns cook, prepare two fried eggs in a pan. Heat the pan over medium heat and allow it to get hot. Add olive or avocado oil spray to prevent sticking and then add the eggs to the pan. Prepare them according to your preference for either easy, medium, or hard cooked eggs. You can also use a scrambled or poached egg here if you prefer.
Add half of an avocado to a bowl and mash well. When the hash brown patties are cooked, carefully place them on a plate. Spread half of the avocado spread on each hash brown.

For the air fryer: place the hash brown patties in the air fryer basket. Cook them at 400 degrees for 6-8 minutes. Flip them and cook for another 3-4 minutes or until crispy. For the oven: bake according to package instructions. Note that the oven will take longer than the air fryer. Use the broil function for the last few minutes to help the hash brown patties get crispy.
