This Heavenly Hunks copycat recipe is a remake of one of our favorite treats to buy at Costco or the grocery store. They're a sweet treat packed with oats, coconut, and mini chocolate chips and they're less expensive to make at home.
⅓cupnatural nut butter of choice (peanut, almond, cashew or sunbutter)
¼cuphoney
1tablespoonbrown sugar or coconut sugar
¼cupmini chocolate chips
Instructions
Begin by adding your oats to a high powered blender or food processor. Pulse the oats a few times until the oats are mostly broken up into smaller pieces. Don’t over-blend here—you still want the oats to have texture.
Add the oats, shredded coconut and salt to a large mixing bowl. Mix until combined.
Add the melted coconut oil, nut butter, honey, and brown sugar. Mix until fully combined.
Add in the mini chocolate chips and mix well.
Line a bread pan with parchment paper. Add the oat mixture into the loaf pan and press the mixture down firmly. Place the pan in the freezer for 20-30 minutes, or until the mixture has fully hardened. Cut into chunks. Store in the freezer or refrigerator.
Notes
These need to be refrigerated instead of left at room temperature to help them retain their texture. You can also freeze them and take them out a few minutes before eating. They can last for 1-2 weeks in the fridge and 3 months in the freezer.
This recipe can easily be made gluten-free with the use of certified gluten-free oats. For a dairy-free version, be sure to use dairy-free chocolate chips like Enjoy Life brand. These are made with honey so they may not be suitable for a vegan. These are vegetarian.
