This Heavenly Hunks copycat recipe is a remake of one of our favorite treats to buy at Costco or the grocery store. They're a sweet treat packed with oats, coconut, and mini chocolate chips and they're less expensive to make at home.

Heavenly Hunks Ingredients
- Old-fashioned oats - be sure to use certified gluten-free oats if necessary. You will essentially create a version of oat flour to use in this recipe.
- Coconut oil - we chose use coconut oil instead of palm oil like the original heavenly hunks as it is easier to find and we like the light coconut flavor it gives.
- Nut butter of choice - peanut butter, almond butter, cashew butter, or sunbutter will all work great.
- Honey
- Brown sugar or coconut sugar - the original recipe uses brown sugar, so we had to include a touch of brown sugar to help them taste like the real deal. Cane sugar won't have the same effect.
- Shredded coconut flakes - feel free to use sweetened or unsweetened depending on your preference.
- Pinch of salt
- Mini chocolate chips - normal chocolate chips or dark chocolate chunks will also work as well. Feel free to use dark chocolate chips or semisweet chocolate chips. You can also use while chocolate chips if that is your preference.

Step by Step Directions

Begin by adding your oats to a high powered blender or food processor. Pulse the oats a few times until the oats are mostly broken up into smaller pieces. Don’t over-blend here—you still want the oats to have texture.
Add the oats, shredded coconut and salt to a large mixing bowl. Mix until combined.
Add the melted coconut oil, nut butter, honey, and brown sugar. Mix until fully combined.
Add in the mini chocolate chips and mix well.
Line a bread pan with parchment paper. Add the oat mixture into the loaf pan and press the mixture down firmly. Place the pan in the freezer for 20-30 minutes, or until the mixture has fully hardened. Cut into chunks. Store in the freezer or refrigerator.
Tips & Variations
- Make sure to chill the heavenly hunks oatmeal dark chocolate bites completely before cutting to prevent them from crumbling.
- If your mixture looks a bit dry, feel free the add a touch more peanut butter and honey until they reach the desired consistency.
- Feel free to play around with the mix-ins. You can add white chocolate chips, a touch of almond extract, and sprinkles for a birthday version, or cranberries and almond for a cranberry almond version.

These need to be refrigerated instead of left at room temperature to help them retain their texture. You can also freeze them and take them out a few minutes before eating. They can last for 1-2 weeks in the fridge and 3 months in the freezer.
