These hot honey salmon bites with mango salsa have just the right amount of heat and are packed with tons of flavor. Serve them in a taco or over rice for a delicious, quick, and easy weeknight dinner the whole family will love.
If you plan to cook the salmon bites in the oven (instead of the air fryer) preheat the oven to 400 degrees. Begin by patting the salmon filets dry with a paper towel to remove any extra moisture. Cut the salmon into 1 inch cubes and add them to a bowl. Add the olive oil, spices, cornstarch, lime juice, and hot honey. Mix well.
Next, cook your salmon bites.
For the air fryer—spray the air fryer basket liberally with oil spray to prevent sticking. Add the salmon bites to the basket in an even layer. Set the air fryer to 400 degrees and cook the salmon bites for 7-9 minutes, or until the salmon is fully cooked through. The cook time will vary based on the size of your salmon chunks.
For the oven—preheat the oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper. Evenly spread the salmon bites into a single layer across the sheet. Bake for 10-14 minutes, or until the salmon is fully cooked through. You can turn the oven on broil for the last minute to allow the salmon to get to crispy perfection on the outside of the salmon, but watch closely so it doesn't burn.
Assemble your bowls.
While the salmon bites are cooking, make the mango salsa. Add the mango, cilantro, red onion, jalapeño, hot honey, lime, and salt to a bowl.
Serve the salmon bites and mango salsa in a taco form or over rice in a bowl.
