Ingredient Notes
- For the salmon:
- Fresh Salmon - you can use Atlantic or sockeye salmon fillet here, but we recommend Atlantic for the best results. Use a sharp knife to cut the salmon into bite-sized pieces, about ~1 in cubes.
- Olive oil
- Spices - paprika, chili powder, onion powder, garlic powder, salt
- Cornstarch or arrowroot powder
- Fresh lime juice
- Hot honey - Mike's Hot Honey is our favorite, but any hot honey will work! You can make your own hot honey as well.
- For the mango salsa:
- Mangoes
- Cilantro
- Red onion
- Jalapeño
- Hot honey
- Lime
- Salt to taste
- For serving:
- Cooked jasmine rice or corn tortillas

Step 1: If you plan to cook the salmon bites in the oven (instead of the air fryer) preheat the oven to 400 degrees. Begin by patting the salmon filets dry with a paper towel to remove any extra moisture. Cut the salmon into 1 inch cubes and add the salmon pieces to a bowl. Add the olive oil, spices, cornstarch, lime juice, and hot honey. Mix well.
Step 2: Next, cook your salmon bites:
- For the air fryer—spray the air fryer basket liberally with oil spray to prevent sticking. Add the salmon bites to the basket in an even layer. Set the air fryer to 400 degrees and cook the salmon bites for 7-9 minutes, or until the salmon is fully cooked through.
- For the oven—preheat the oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper. Evenly spread the salmon bites into a single layer across the sheet. Bake for 10-14 minutes, or until the salmon is fully cooked through. You can turn the oven on broil for the last minute to allow the salmon to get to crispy perfection on the outside of the salmon, but watch closely so it doesn't burn.
Step 3: While the salmon bites are cooking, make the mango salsa. Add the mango, cilantro, red onion, jalapeno, hot honey, lime, and salt to a bowl.
Step 4: Serve the salmon bites and mango salsa in a taco form or over rice in a bowl.
Tips & Variations
- Serve the salmon bites and mango salsa in tortillas or in a rice bowl for a complete meal. It's also a great option in a salad.
- If you or your family don't tolerate heat well, you can swap normal honey in place of the hot honey in the spicy hot honey sauce. Feel free to adjust the chili powder as well.
- The cooking time will vary depending on the size of your salmon bites.
