These meal prep breakfast sandwiches are a lifesaver for a busy weekday morning when you still want to prioritize a filling and protein-rich breakfast but are short on time. We provide several options for storing and reheating to make prepping breakfast ahead of time as easy as possible!
12pieces of cooked bacon or turkey bacon, or sausage/chicken sausage patties
12pieces of sliced cheese, optional

Instructions
Preheat the oven to 350 degrees. Add the eggs, cottage cheese, salt, garlic powder, onion powder, and pepper to a blender. Blend until smooth.
Spray the pan really well with non stick spray or brush it with oil to prevent sticking. Pour the egg mixture on the pan. Sprinkle the spinach over the eggs. Bake the eggs for 16-20 minutes, or until fully set and no longer liquid in the center. Once the eggs have cooled, cut them into 12 evenly spaced squares.
While the eggs are baking, prepare the meat if it is not precooked.
Set the oven to broil and slice the english muffins in half. Lay the english muffins face up on a baking sheet. You may need to do this in 2 batches depending on the room on the baking sheet. If you are serving these sandwiches right away and adding cheese, add a slice of cheese to one side of the english muffin. Let the english muffins broil until lightly golden brown. Watch closely to prevent burning. If you are prepping these to eat at a later time, wait to add the cheese until after you have broiled the english muffins.
Assemble the sandwiches with 1 english muffin, 1 egg patty, 1 piece of bacon or sausage patty, and cheese if desired. If you are storing these sandwiches for later, wrap them individually in plastic wrap or tinfoil once they've completely cooled and store them in an airtight container or Ziploc bag. Our favorite way to reheat them is for 15 seconds in the microwave, and then 1-2 minutes in the air fryer at 400 degrees. You could also reheat in a toaster oven. For a gluten-free version, use a gluten-free english muffin. For a dairy-free version, skip the cheese and swap the cottage cheese for an additional 3 eggs in the blender.
