These meal prep breakfast sandwiches are a lifesaver for a busy weekday morning when you still want to prioritize a filling and protein-rich breakfast but are short on time. We provide several options for storing and reheating to make prepping breakfast ahead of time as easy as possible!

Why You’ll Love These Homemade Breakfast Sandwiches

Ingredient Notes
- For the eggs:
- Large eggs - we have only used whole eggs for this recipe. We have found that liquid egg whites don't hold up as well.
- Cottage cheese
- Salt, garlic powder, onion powder, black pepper
- Spinach
- For serving:
- English muffins - sourdough english muffins are delicious, and we also love Dave's brand of english muffins.
- Cooked bacon or turkey bacon, or sausage/chicken/turkey sausage patties - you've got options! Choose your favorite breakfast meat. You can use pre-cooked bacon or sausage for ease. For chicken sausage patties, we love Applegate because they have simple ingredients and are pre-cooked sausage patties! Canadian bacon is another option.
- Sliced cheese - optional! Feel free to add your favorite variety of cheese. We love freshly sliced white cheddar.
- Optional for serving: avocado & hot sauce of choice

Step by Step Directions

Step 1: Preheat the oven to 350 degrees. Add the eggs, cottage cheese, salt, garlic powder, onion powder, and pepper to a blender. Blend until smooth.
Step 2: Spray the pan really well with non stick spray or brush it with oil to prevent sticking. Pour the egg mixture on the pan. Sprinkle the spinach over the eggs. Bake the eggs for 16-20 minutes, or until fully set and no longer liquid in the center.
While the eggs are baking, prepare the meat if it is not precooked.
Step 3: Once the eggs have cooled, cut them into 12 evenly spaced squares.
Step 4: Set the oven to broil and slice the english muffins in half. Lay the english muffins face up on a baking sheet. You may need to do this in 2 batches depending on the room on the baking sheet. If you are serving these sandwiches right away and adding cheese, add a slice of cheese to one side of the english muffin. Let the english muffins broil until lightly golden brown. Watch closely to prevent burning. If you are prepping these to eat at a later time, wait to add the cheese until after you have broiled the english muffins.
Step 5: Assemble the sandwiches with 1 english muffin, 1 egg patty, 1 piece of bacon or sausage patty, and cheese if desired. If you are storing these sandwiches for later, wrap them individually in plastic wrap or tinfoil once they've completely cooled and store them in an airtight container or Ziploc bag. Our favorite way to reheat them is for 15 seconds in the microwave, and then 1-2 minutes in the air fryer at 400 degrees. You could also reheat in a toaster oven. Tips & Variations
- If you don't need 12 sandwiches, you can easily cut the recipe in half and bake the eggs in a casserole dish instead and make 6 sandwiches.
- You can add a few more veggies to the eggs if desired like red peppers or mushrooms. Just don't overdo it or you will have soggy sandwiches.
FAQ
For the fridge: Wrap each sandwich individually in plastic wrap and place in the fridge. Store for up to 5 days. Reheat in the microwave, toaster oven, or air fryer. Our favorite method is to remove the plastic wrap and reheat for 15 seconds in the microwave, and then 1-2 minutes in the air fryer on 400 degrees to crisp the sandwich.
For the freezer: Wrap each sandwich individually in plastic wrap or tinfoil and then place all of the sandwiches in a Ziploc freezer bag or air tight container. Store in the freezer for up to 2 months. Any longer than that and you may experience some freezer burn. When you're ready to reheat, you can take the sandwich out the night before and place it in the fridge to defrost overnight. Then remove the plastic wrap and reheat in the microwave, air fryer, or toaster oven in the morning. To reheat a completely frozen sandwich, place the sandwich on the defrost setting in the microwave. Once the sandwich has defrosted, we recommend toasting it in the air fryer or oven.
For a gluten-free version, use a gluten-free english muffin. For a dairy-free version, skip the cheese and swap the cottage cheese for an additional 3 eggs in the blender.
