Instructions
Add the seasonings to a small bowl and mix to combine. Line a sheet pan with parchment paper.
Preheat the oven to 425°F. Cut the potatoes into bite-sized pieces and place them in a large bowl. Toss with a tablespoon of oil and about ⅓ of the seasoning blend. Spread them evenly on the sheet pan. Place the sheet pan in the oven and bake for 15 minutes.
While the potatoes are cooking, slice the zucchini and red onion. Toss them with a couple teaspoons of oil and another ⅓ of the seasoning blend. Set aside.
Pat the salmon dry and drizzle lightly with oil. Sprinkle the remaining ⅓ of the seasoning blend evenly over the tops of the filets.
Remove the potatoes from the oven and add the zucchini and onion. Toss everything together on the pan, then make space to nestle in the salmon filets. Place the salmon filets on the sheet pan.
Return the sheet pan to the oven and bake for 12-15 minutes, or until the salmon reaches an internal temperature of 145°F. If you prefer the salmon a bit crispier on top, broil for 1–2 minutes at the end.
Add a squeeze of fresh lemon over the salmon and vegetables. Top with feta if desired.
