Ingredient Notes

- Yukon gold potatoes โ Their creamy texture holds up well at high heat and makes the base of the sheet pan. Cut into small, even pieces so they roast properly.
- Olive oil โ A classic in Mediterranean salmon recipes, it helps crisp the vegetables and keeps the salmon moist. Avocado oil works too.
- Zucchini โ Thinly sliced so it cooks quickly and caramelizes on the baking sheet. Looking for other zucchini recipes? Try our skillet zucchini turkey meatballs with red sauce or our lemon zucchini poppyseed muffins.
- Red onion - we prefer red onion for this recipe but you can swap with a white onion or yellow onion.
- Salmon fillets โ Use fresh salmon if possible. We typically use Atlantic salmon but king salmon or sockeye both work well. Pat dry with a paper towel so the seasoning sticks to the top of the fish.
- Lemon โ Adds brightness; use both lemon juice and lemon zest for extra flavor at the end.
- Feta (optional) โ A sprinkle of feta pairs perfectly with the warm spices and adds creamy, salty contrast.

- If you love pan-seared salmon, you can sear the salmon first (skin-side down), then finish it on the sheet pan with the vegetables.
- Feel free to use fresh herbs such as dill, parsley, or basil sprinkled over the top of the salmon after baking to add even more fresh flavor.
