Oatmeal Banana Peanut Butter Bars With Chocolate Chips
These oatmeal banana peanut butter bars are packed with wholesome ingredients. They are a delicious combination of peanut butter, banana, oatmeal, and chocolate chips.
Preheat the oven to 350 degrees Fahrenheit and line an 8x8 baking dish with parchment paper.
Add the peeled bananas to a large mixing bowl and mash with a whisk, fork, or potato masher. Add the eggs, vanilla, maple syrup, and peanut butter to the mashed banana. Mix the wet ingredients together until well-combined.
Next, add the dry ingredients. Add the oat flour, protein powder, baking powder, baking soda, and salt to the wet ingredients and mix until just combined. Gently stir in the chocolate chips.
Pour the batter into the prepared baking pan and sprinkle a few extra chocolate chips on top.
Place the pan into the preheated oven and bake for 25-30 minutes or until the edges are golden brown and a toothpick comes out with a few moist crumbs.
Let the bars cool, then cut into 9 pieces. Enjoy!

You can easily make your own oat flour by blending oats in a blender or processing them in a food processor until fine.
