This easy sausage and veggie skillet made with chicken sausage, bell peppers, and zucchini is packed with flavor and perfect for busy weeknights—ready in under 30 minutes with minimal prep!
16ouncessausage, cut into ½ inch slices (we prefer to use chicken sausage)
2bell peppers, thinly sliced
1zucchini, sliced
1cupcorn (frozen, fresh, or canned)
2teaspoonsminced garlic
¾teaspoononion powder
¾teaspoonsmoked paprika
¾teaspoonoregano
½teaspoonsalt
½teaspoonblack pepper
½teaspoonred pepper flakes, optional
Instructions
Heat oil in a large skillet over medium heat. Add sausage and cook for 4-5 minutes, stirring occasionally, until browned. Remove the sausage from the skillet and set aside.
In the same skillet, add bell peppers and zucchini. Sauté for 4–5 minutes until they begin to soften. Add minced garlic and cook for 1 minute, stirring to avoid burning. Stir in the corn, then return the sausage to the skillet.
Add the seasonings and stir well to coat everything evenly.
Cook for 1-2 more minutes, until everything is well combined.

Save time/prep ahead: Cut the vegetables ahead of time. Prepare the seasonings ahead of time and set aside until ready to cook.
