These quick and easy ground pork lettuce wraps are simple, fresh, and full of great flavors. The pork filling features a simple sauce which nestles perfectly into crisp lettuce cups.
Add the sesame oil, soy sauce, rice wine vinegar, honey, and cornstarch to a small bowl. Whisk until combined.
Place a large skillet on the stove over medium heat. Once the oil is hot, add the ground pork. Use a spatula to break the pork into small pieces as it cooks. Let the pork continue to cook for 5-7 minutes, or until the pork is fully cooked.
Add the green onions, zucchini, carrots, garlic, and ginger. Let the vegetables soften for 2-3 minutes. Add the sauce in and let simmer for 2-3 more minutes, or until the sauce is thickened. Remove the pan from the heat and mix in the lime juice. Let the mixture cool for a few minutes before serving in the lettuce.Top with additional fresh lime juice, Sriracha, and sesame seeds if desired.
