Instructions
Position your oven rack to the center of the oven, about 8 inches from the heating element. Preheat the oven to 400 degrees. Line a 9x13 casserole dish with parchment paper. Cut down the excess paper sticking up to prevent the parchment paper from burning when you broil the salmon. Lay the salmon filets in the dish.
In a microwave safe bowl, melt the butter. Once the butter is melted, add the miso paste, brown sugar, soy sauce, minced garlic, and lime juice and mix until combined.
Use a pastry brush to generously brush the salmon with half of the butter mixture. Reserve the other half of the butter mixture.
Bake the salmon for 10 minutes. Remove the pan from the oven and brush the remaining butter mixture on the top of the salmon filets. Turn the oven to broil and place the salmon back in the oven to broil for 4-5 more minutes depending on the thickness of your salmon. Watch closely to prevent burning. Remove the salmon from the oven once it reaches 135-140 degrees and is slightly caramelized on top. If the salmon is getting too brown on the top but is not quite done internally, you can place the salmon on a lower rack in the oven to finish cooking or turn the oven back to the bake setting at 400 degrees.
Drizzle a spoonful of the sauce in the pan on top when you serve.
Notes
For a dairy-free option, use a dairy-free butter alternative or olive oil. For a gluten-free option, use tamari instead of soy sauce.
