Ingredient Notes
- Salmon filets - use whatever type of salmon you prefer. We prefer atlantic salmon because it is typically more mild and less fishy. If you're a fan of sockeye salmon, that will definitely work as well. We typically use skinless salmon. If you use salmon with the skin on, just brush the miso butter on the non skin sides.
- Butter
- White miso paste - there are different types of miso with varying flavors. We recommend white miso paste instead of yellow miso or red miso. We find this at our local grocery store, but Trader Joe's miso is our favorite. You can also find it at Asian grocery stores. Miso is a staple of Japanese cuisine and creates a delicious dish with umami flavor. Definitely don't skip the miso as it's one of the main ingredients that makes this salmon so good!
- Brown sugar - swap with coconut sugar if you prefer.
- Low-sodium soy sauce - for a gluten-free option, we recommend tamari.
- Minced garlic
- Lime juice

Step by Step Directions

Step 1: Position your oven rack to the center of the oven, about 8 inches from the heating element. Preheat the oven to 400 degrees. Line a 9x13 casserole dish with parchment paper. Cut down the excess paper sticking up to prevent the parchment paper from burning when you broil the salmon. Lay the salmon filets in the dish.
Step 2: In a microwave safe bowl, melt the butter. Once the butter is melted, add the miso paste, brown sugar, soy sauce, minced garlic, and lime juice and mix until combined.
Step 3: Use a pastry brush to generously brush the salmon with half of the butter mixture. Reserve the other half of the butter mixture.
Step 4: Bake the salmon for 10 minutes. Remove the pan from the oven and brush the remaining butter mixture on the top of the salmon filets. Turn the oven to broil and place the salmon back in the oven to bake for 4-5 more minutes depending on the thickness of your salmon. Remove the salmon from the oven once it reaches your preferred temperature and is slightly caramelized on top. If the salmon is getting too brown on the top but is not quite done internally, you can place the salmon on a lower rack in the oven to finish baking.
Drizzle a spoonful of the sauce in the pan on top when you serve.
Tips & Variations
- Our favorite way to serve this salmon is over jasmine rice or cauliflower rice with steamed or sautéed green beans or snap peas.
- The cooking time may vary depending on the thickness of your salmon filet. When the salmon is no longer dark pink and is flakey, it is done. The best way to check for doneness is using a meat thermometer. The minimum internal temperature should reach 145 degrees.
- If the salmon has been rinsed, be sure to pat it dry with a paper towel.
- For a nice garnish, top with sesame seeds and sliced green onions.
- Feel free to double the miso butter mixture if you prefer extra sauce.

We don't recommend cooking this salmon in the air fryer unless you have it lined with a parchment liner. Using a pan allows you to catch all the delicious sauce that the salmon cooks in.

- 3 tablespoons white miso paste
- 2 tablespoons brown sugar
- 2 tablespoons low sodium soy sauce (tamari for gluten-free)
- 1 teaspoon minced garlic
- 1 tablespoon lime juice
Instructions

Remove the salmon from the oven once it reaches 135-140 degrees and is slightly caramelized on top. If the salmon is getting too brown on the top but is not quite done internally, you can place the salmon on a lower rack in the oven to finish cooking or turn the oven back to the bake setting at 400 degrees.
- Drizzle a spoonful of the sauce in the pan on top when you serve.
