These pancake bites are the perfect quick and easy breakfast whether you're at home or on the go. They are light and fluffy with the perfect hint of sweetness.
Mix-ins of choice: chocolate chips, blueberries, crumbled sausage, crumbled bacon, etc.
For serving: maple syrup
Instructions
Preheat the oven to 350 degrees Fahrenheit. Add the cottage cheese and milk to a blender and blend until completely smooth. Pour the mixture into a large mixing bowl.
Add the egg, maple syrup, melted (and cooled) butter or avocado oil, and vanilla and whisk the wet ingredients together well.
Add the flour, baking powder, baking soda, and salt and whisk until smooth.
Spray a muffin tray well with oil spray to prevent sticking. Evenly divide the batter between the muffin tins. Add any mix-ins of choice on top of the batter.
Place the muffin tray in the oven for 10-14 minutes, until the edges are just turning golden brown.
Notes
If you want to freeze these pancake bites, we recommend letting them sit in the freezer on a sheet pan for a few hours and then transferring them to an airtight container or ziploc bag/freezer bag. That way, the pancake muffin bites won't stick together. Then, simply microwave them on a busy morning for a quick breakfast!
It is still possible to make these pancake bites if you have dietary restrictions. For a gluten-free option, use 1 to 1 gluten-free flour.
