Ingredient Notes
- Oil spray - you will need non-stick cooking spray for the muffin tin prior to adding the pancake batter.
- Milk - feel free to use your milk of choice—you can use a regular cow's milk such as whole milk or a plant-based milk such as almond milk.
- Cottage cheese - any cottage cheese will work for this, we have liked using the Good Culture brand.
- Egg
- Pure maple syrup - this is where a lot of the sweetness comes from for these pancakes bites! You can use a different kind of sweetener, such as honey, if you prefer.
- Melted butter or avocado oil - you could also use olive or coconut oil.
- Vanilla
- Flour - we recommend using all purpose flour for this recipe. We have not tested this recipe with wheat flour, oat flour, or Kodiak Cakes pancake mix but it would likely result in a denser pancake bite.
- Baking powder
- Baking soda
- Kosher salt
- Mix-ins of choice: chocolate chips, blueberries, crumbled sausage, crumbled bacon
- For serving: maple syrup

Step by Step Directions

Step 1: Preheat the oven to 350 degrees Fahrenheit. Add the cottage cheese and milk to a blender and blend until completely smooth. Pour the mixture into a large mixing bowl.
Step 2: Add the egg, maple syrup, melted (and cooled) butter or avocado oil, and vanilla and whisk the wet ingredients together well.
Step 3: Add the flour, baking powder, baking soda, and salt and whisk until smooth.
Step 4: Spray a muffin tray well with oil spray to prevent sticking. Evenly divide the batter between the muffin tins. Add any mix-ins of choice on top of the batter.
Place the muffin tray in the oven for 10-14 minutes, until the edges are just turning golden brown.
Tips & Variations
- One of our favorite ways to vary these pancake bites is to change the mix-ins! We love chocolate chips or berries for berry protein pancake bites. It would also be fun to add banana or coconut to the batter. You can also top with a little cinnamon sugar. You can even make savory pancake bites by adding bacon or sausage crumbles or shredded cheese. Get creative and add your favorite mix-ins!
- You could also make these in a mini muffin pan for mini bites for little kids. Note, however, that the bake time will be less so keep a close eye on them.
- For a more complete meal, we love to serve these pancake bites along with something else such as fresh fruit, yogurt, eggs, bacon, or sausage.

We recommend letting them sit in the freezer on a sheet pan for a few hours and then transferring them to an airtight container or ziploc bag/freezer bag. That way, the pancake muffin bites won't stick together. Then, simply microwave them on a busy morning for a quick breakfast!
It is still possible to make these pancake bites if you have dietary restrictions. For a gluten-free option, use 1 to 1 gluten-free flour.
