You're going to want to add this wonton salad to your salad rotation! It's packed with lots of flavor and texture and is anything but boring. It's a great side dish option or easily turn it into a more filling main dish with the addition of chicken or shrimp.
40frozen mini wontons (chicken, veggie, shrimp, or beef all work!)
1cupshelled edamame
5cupsshredded cabbage (green cabbage or a mix of red and green cabbage)
1cupshredded carrots
½cupdiced green onion
1red bell pepper, diced
½cupminced cilantro
Optional: to make this a heartier main dish, feel free to add grilled chicken, rotisserie chicken, or cooked shrimp for additional protein.
For the sesame dressing:
2tablespoonslow-sodium soy sauce (or tamari for gluten-free)
3tablespoonsrice wine vinegar
1tablespoonsesame oil
2tablespoonsolive oil or avocado oil
1tablespoonmaple syrup
½teaspoonminced garlic
1teaspoon Sriracha
Instructions
Start by cooking the mini frozen wontons according to package directions by either pan-frying or air-frying them to ensure they get a nice golden brown crunch and are heated through in the center. Allow them to rest for 5 minutes after cooking.
While the wontons are cooking, add all of the dressing ingredients to a small jar and mix until combined.
In a large bowl, add the edamame, shredded cabbage, shredded carrots, diced green onion, bell pepper, and cilantro. Add the wontons and mix until combined.
Add your preferred amount of dressing and toss well. We prefer to dress the individual portions of salad with dressing so the leftovers don't get soggy.
Notes
Store leftovers in an airtight container for up to 3 days. If you plan to save leftovers, add dressing to individual portions instead of the entire salad.
This recipe is dairy-free. Most wontons are not gluten-free, but if you find a gluten-free wonton brand, you can swap for those and use tamari instead of soy sauce. For a vegan or vegetarian option, use vegetable wontons.
