These oven baked shrimp skewers feature tender shrimp with delicious flavor thanks to fresh ingredients like zesty lime, cilantro, garlic, jalapeño, and flavorful spices.
1cupof cilantro (mostly leaves, some stems are fine)
1lime, juiced
2tablespoonsolive or avocado oil
1teaspoonminced garlic
½of a jalapeño (seeds removed if you want it to be less spicy)
½teaspoonchili powder
½teaspooncumin
½teaspoonsmoked paprika
¾teaspoonkosher salt
Instructions
Preheat the oven to 425 degrees. If you’re using wooden skewers, place them in a shallow dish of water to soak to prevent them from burning in the oven. Add the cilantro, lime juice, oil, garlic, jalapeño, and all of the seasonings to a blender or food processor. Blend until smooth.
Make sure the shrimp is thawed if it was previously frozen. Pat the shrimp dry with paper towels and add them to a bowl. Pour the cilantro lime marinade on top and mix well.
Thread the shrimp onto the sharp end of the skewer. Lay the skewers on a baking sheet lined with parchment paper. Bake in the preheated oven for 6-9 minutes, or until the shrimp is fully cooked (internal temperature of 145 degrees Fahrenheit) and an opaque pink color. If you choose not to use skewers, you can place the shrimp directly on the parchment lined baking sheet and cook for the same amount of time, tossing halfway through the cooking time or cook in a skillet on the stove.
