Ingredient Notes
- Raw shrimp - we always like to use high-quality shrimp! We recommend using large shrimp or jumbo shrimp. We also recommend using deveined shrimp (so raw, large, deveined, with tail-off). Note that the size of the shrimp will make a difference in cooking time, where smaller shrimp will need less time in the oven. The large shrimp also fit better onto the skewers.
- Cilantro - mostly leaves, some stems are fine
- Fresh lime juice
- Olive or avocado oil
- Minced garlic - we prefer using fresh garlic over garlic powder for this recipe.
- Jalapeño - if you

Step by Step Directions

Step 1: Preheat the oven to 425 degrees. If you’re using wooden skewers, place them in a shallow dish of water to soak to prevent them from burning in the oven. Add the cilantro, lime juice, oil, garlic, jalapeño, and all of the seasonings to a blender or food processor. Blend until smooth.
Step 2: Make sure the shrimp is thawed if it was previously frozen. Pat the shrimp dry with paper towels and add them to a bowl. Pour the cilantro lime marinade on top and mix well.
Step 3: Thread the shrimp onto the sharp end of the skewer. Lay the skewers on a baking sheet lined with parchment paper. Bake in the preheated oven for 6-9 minutes, or until the shrimp is fully cooked (internal temperature of 145 degrees Fahrenheit) and an opaque pink color. If you choose not to use skewers, you can place the shrimp directly on the parchment lined baking sheet and cook for the same amount of time, tossing halfway through the cooking time or cook them on a skillet on the stove.
