Ingredient Notes
- White jasmine rice - we think that white jasmine rice is the perfect rice for this simple recipe! White rice cooks faster than brown rice and jasmine rice has the perfect texture. If you use a different kind of rice like brown rice, basmati rice, or a regular rice like long grain rice, the cooking time will change and the texture will differ. While some recipes call for rinsed rice, there is no need to rinse rice for this recipe! The end result isn't a super sticky rice, so there's no need to add the extra step.
- Light coconut milk - rather than using a cup of water, you'll need 1 can of coconut milk for this great recipe. This is the ingredient that makes this recipe more flavorful than plain rice! We like to use unsweetened light coconut milk over full-fat coconut milk because we prefer the texture that results. However, you can still use full fat coconut milk (which has more coconut cream) if that is your preference or what you have on hand! We love that the creamy coconut milk adds a delicate coconut flavor and creates a more fragrant rice.

Step 1: Add the jasmine rice, coconut milk, and salt to the instant pot. Stir until combined.
Place and lock the lid on the instant pot. Place the pressure valve to the sealing position. Set the Instant pot to manual High Pressure for 3 minutes. When the instant pot beeps, letting you know the cycle is complete, let it sit for 10 minutes before releasing the remaining pressure with the pressure valve.
