½cupsweet chili sauce (we recommend the Mae Ploy brand)
2teaspoonslow sodium soy sauce
2teaspoonsfresh lime juice
Salt & pepper to season the salmon
2teaspoonsavocado oil, for cooking in the pan
For the mango salsa:
2ripe mangoes, peeled and diced
¼cup red onion, finely diced
½of a medium red bell pepper, finely diced
½of a jalapeño pepper, seeds removed and minced (can adjust amount to spice preference)
1tablespoonfresh cilantro, chopped
Juice of ½ lime
¼teaspoonsalt + more to taste
Instructions
Begin by preparing the salsa. Dice the mango, red onion, and bell pepper. Mince the jalapeno (seed and ribs removed), and chop the cilantro. Place it all into a medium bowl. Add the lime juice and salt and mix until well combined.
Next, prepare the sweet chili sauce. Add the sweet chili sauce, soy sauce, and lime juice to a small bowl and mix until well combined.
Next, prepare the salmon. Pat each filet dry with a paper towel and sprinkle each side of the filet with salt and pepper.
Add the avocado oil to a large non-stick pan over medium heat until it is shimmering. Place the salmon into the pan (you may need to do two batches depending on the size of your pan). Do not move the salmon again for about 4-5 minutes, until it is golden brown and crispy. Flip the salmon to the other side and cook for another 4-5 minutes, until that side is also golden brown and crispy (and at an internal temperature of 145 degrees F.)
Spoon the sweet chili glaze over the top of the salmon filets after the filets are removed from the pan. Top with mango salsa.
We also love serving this salmon with our favorite coconut rice which can be made in the instant pot or rice cooker.
Notes
This recipe can be gluten-free with the use of tamari or coconut aminos in place of soy sauce. Double check that the sweet chili sauce you use is also gluten-free. It is dairy-free. It is not vegetarian or vegan.
