These crispy chicken fajitas wraps are one of our favorite easy lunch or dinner options. It's an easy way to elevate traditional chicken fajitas and it comes together in less than 30 minutes.

Ingredient Notes
- Olive oil
- Red bell pepper and red onion - orange or yellow bell peppers will work too.
- Shredded chicken - we often use rotisserie chicken for ease! You can also use any other leftover chicken or simply prep chicken in the instant pot, oven, crockpot, or stovetop. For stovetop option, add 1 tablespoon of olive oil to a nonstick skillet. Cut boneless skinless chicken breast into thin strips. Add to the pan over medium-high heat and cook until fully cooked and the chicken reaches 165 degrees Fahrenheit.
- Salsa
- Cumin, garlic powder, chili powder, and salt
- Refried beans - our favorite brand of refried beans is Siete. We also like to make our own version by blending 1 can of black beans, 1 tbsp olive or avocado oil, salt + cumin + garlic powder + chili powder to taste, and a few tablespoons of water (to help the beans blend). Simply blend in a high power blender or food processor until the beans are smooth!
- Shredded cheese (optional) - cheddar cheese or Mexican cheese blend will work great. Or leave it off all together!
- Large tortilla wraps - any flour tortillas or gluten-free option will work here. Corn tortillas aren't a great option because they break apart too easily
- Any toppings or dipping sauces of choice - salsa, guacamole, cilantro, jalapeño, fresh avocado, hot sauce, fresh cilantro, sour cream, pico de gallo, fresh lime juice, or Bitchin' Sauce are all great options.

Step by Step Directions

Heat a large skillet on the stove over medium heat. Add the olive oil. When the pan is hot, add the bell pepper and red onion. Let the mixture cook for 3-4 minutes or until the veggies begin to soften.
Add the shredded chicken, salsa, cumin, garlic powder, chili powder, and salt to the pan. Mix well and let the mixture continue to cook for 2-3 more minutes. Remove the pan from the heat and transfer the mixture to a large bowl.
Heat the tortillas in the microwave for 15-20 seconds. Assemble your fajita wraps by spreading a few tbsp of refried beans down the center of the warm tortilla. Add about 1 cup of fajita mixture on top of the refried beans. Sprinkle cheese on top if desired.
Roll the tortilla up.
Place the pan back on the stove on medium heat. Add olive oil spray to the pan. Place the wrap seam side down on the hot pan. Let the wrap brown for about a minute each side. Repeat with the rest of the wraps.
Serve with any desired toppings or dipping sauces.
Tips & Variations
- We prefer to make our own seasoning mix instead of using store-bought seasonings, but feel free to use fajita seasoning if you're looking for a shortcut.
- Not in the mood for a tortilla? Make these into easy & yummy lettuce wraps using butter lettuce.
- The fajita chicken filling is also delicious on top of tortilla chips for nachos.
- You can also use a grill pan or a panini press to brown the wrap.
FAQ
We prefer to store the components in individual containers and then assemble the wrap the day of and heat it fresh in the pan.
For a gluten-free option, use Siete almond flour tortillas or another GF brand. For a dairy-free option, simply leave out the cheese.

These were so simple and full of flavor. I used about half a rotisserie chicken for just myself (other half plus the bones for soup later) and in addition to the red bell pepper and onion (MUCH tastier than green bell peppers) I diced and added some jalapeños to the mix and a little cayenne. Day one was so delicious I wolfed down two. Next night I added a little more salsa when reheating the filling and some fresh jalapeño strips.
I love the beans inside holding everything together. It grills so perfectly. I used a little Monterey Jack and cheddar and I love how the flavors are so satisfying and not fighting for dominance. This is definitely going to be one of my go-to meals. Seriously. Deceptively simple. Easily customizable. And a perfect vehicle for some chipotle Bitchin’ Sauce!
